Alaska Salmon Bake with Pecan Crunch Coating
Makes 6 servings
3 tablespoons Dijon mustard
3 tablespoons butter, melted
3 teaspoons honey
1/2 cup fresh bread crumbs
1/2 cup finely chopped pecan halves
3 teaspoons chopped fresh parsley
6 (4 ounce) salmon fillets
6 lemon slices
1. Mix together mustard, butter, and honey in a small bowl;
set aside.
2. Mix together bread crumbs, pecans, and parsley in a small
bowl; set aside.
3. Season each salmon fillet with salt and pepper. Place on
a lightly greased baking sheet. Brush with mustard-honey
mixture. Pat top of each fillet with bread crumb mixture.
4. Bake at 400 degrees F for 10 mins per inch of thickness,
measured at thickest part, or until salmon just flakes when
tested with a fork. Serve with lemon wedges.
