Birds' Nests 
Makes 4 dozen

1 cup almonds or pecans
1/2 cup butter or margarine
1/4 cup brown sugar
1 cup sifted all-purpose flour
1 egg
       
1. Preheat oven to 350 degrees F. Grease cookie sheets. 
2. Cream butter and brown sugar. Separate the egg and reserve
   the egg white. Stir in egg yolk and mix well. 
3. Add the flour and knead dough lightly on board. 
4. Coarsely chop almonds or pecans and place in shallow bowl. 
5. Shape dough into 1 inch balls. Dip into beaten egg white and
   chopped nuts. Place on cookie sheets and indent top with
   fingertip. Bake for 10 mins. 
6. Indent cookie again with fingertips and continue baking, 8 to
   10 mins.
