Blueberry Explosion Cloud Puffs
Makes 2 dozen
1 cup all-purpose flour
1 cup white sugar
1/2 cup confectioners' sugar
2 egg whites
1/2 cup lowfat - nonfat plain or blueberry yogurt
1 teaspoon baking powder
1/4 teaspoon salt
1 1/2 cups blueberries
2 cups miniature marshmallows
1. Combine baking powder, salt, egg whites, yogurt, and 1/2
cup blueberries with an electric mixer. This will result in a
blue colored mixture.
2. Fold in sugars and flour to the wet mixture. When thoroughly
combined, fold in the remaining cup of blueberries and the full
amount of marshmallows.
3. Roll dough into balls, place on a cookie sheet coated with
cooking spray. Cook for 12 minutes at 375 degrees F.
