Carrot-Orange Bars 
Makes 2 dozen

2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon ground nutmeg
3/4 cup butter or margarine, softened
1/3 cup orange juice
1 teaspoon vanilla extract
1 egg
1/2 cup white sugar
2 teaspoons grated orange rind
1/2 cup flaked coconut
1 cup cooked, mashed carrots
1/2 cup orange juice
1 teaspoon orange rind, grated fine
1 1/2 cups confectioners' sugar
                   
1. Preheat oven to 350 degrees F. Grease an 8x11" pan. 
2. In a med sized bowl, cream the butter, sugar, egg and
   vanilla. Stir until well blended. 
3. Sift together the flour, baking powder, salt and nutmeg and
   slowly add to mixture, alternating with 1/3 cup orange juice
   and 2 tsps of rind. Mix well. 
4. Stir in the coconut and carrots. Pour batter into baking pan.
   Bake for about 35 mins. Let cool on wire racks. 
5. Combine 1/2 cup of orange juice, 1 tsp of orange rind and 1
   1/2 cups confectioners' sugar. Warm slightly and pour over bars.
