Cherry-Cornflake Cookies
Makes 4 dozen
2 1/4 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
3/4 cup butter or margarine, softened
1 cup white sugar
2 eggs
1/8 cup milk
1 teaspoon vanilla extract
1 cup chopped nuts
1 cup chopped raisins
1/3 cup finely chopped candied cherries
1 1/3 cups crushed corn flakes
20 candied cherries, quartered
1. Mix together flour, baking powder and salt and set aside.
2. In large mixing bowl, beat butter and sugar until light and
fluffy. Add eggs and beat well. Stir in milk and vanilla, then
add flour mixture. Combine well. Add nuts, raisins and
chopped cherries.
3. Shape dough into balls using level Tbsp as measure. Roll in
crushed cornflakes. Place 2" apart on greased cookie sheets.
Top with cherry quarter.
4. Bake at 375 degrees F for about 10 mins until lightly browned.
Remove from sheets and cool on wire racks.
