Cookie, Candy & Frosting Recipes

Coconut Washboards 
Makes 6 1/2 dozen

2 cups all-purpose flour
3/4 teaspoon baking powder
1/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/8 teaspoon salt
1 egg
1 teaspoon vanilla extract
1/2 teaspoon almond extract
1 1/3 cups flaked coconut
3/4 cup butter or margarine
1 cup packed brown sugar
                   
1. Mix flour with baking powder, spices and salt and set aside.
   Cream butter and gradually add sugar, beating until light and
   fluffy. Add the egg and both extracts. Beat well. Add the
   flour mixture, blending well. Stir in the coconut. 
2. Divide dough into two equal parts. Pat each half into a
   rectangle measuring about 10x9". Chill if dough is hard to handle.
3. Cut each rectangle into 4 strips lengthwise, then cut each strip
   into 10 pieces. Place each piece 2" apart on ungreased cookie sheets.
   Use a floured fork to gently press ridges into the cookies. 
4. Bake for 8-10 mins at 375 degrees F or until golden.
