Alienated Blueberry Muffins
Makes 2 dozen
1/4 cup butter or margarine
1 1/2 cups white sugar
2 eggs
1 teaspoon vanilla extract
1 cup milk
2 cups all-purpose flour
4 teaspoons baking powder
1 teaspoon salt
2 cups blueberries
1/4 cup all-purpose flour
1. Preheat oven to 375 degrees F. Grease muffins tins.
2. Sprinkle 1/4 cup flour over blueberries, and stir to coat
berries thoroughly.
3. In a large bowl cream butter or margarine, and
gradually add sugar. Beat eggs, and add to creamed
mixture. Whisk together flour, baking powder, and salt.
Stir in milk alternately with flour mixture, mixing well
after each addition. Stir in vanilla and berries. Fill muffin
cups 2/3 full with batter.
4. Bake for 25 minutes.
