Apple Loaf
Makes 1 loaf
1/2 cup butter or margarine
1 cup white sugar
2 eggs
1 teaspoon vanilla extract
1 cup coarsely shredded, unpeeled apple
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup chopped walnuts
1. Mix together flour, baking powder, soda, salt, and nuts.
2. In a large bowl, beat butter or margarine, sugar, and 1
egg until smooth. Add second egg, and beat well. Stir in
vanilla. Stir in shredded apples. Pour flour mixture into
batter. Stir only until moistened. Scrape into greased 9
x 5 x 3 inch loaf pan.
3. Bake in a preheated 350 degrees F oven for 50=60 mins or
until an inserted toothpick comes out clean. Let stand
10 mins, then remove from pan. Place on a rack to cool.
