Sweet Breads from Rina's Kitchen



Apple Muffins 
Makes 12 muffins

2 cups whole wheat flour
1 tablespoon baking powder
1/2 teaspoon salt
1 teaspoon ground cinnamon
3/4 cup nonfat milk
2 egg whites
1/4 cup vegetable oil
1/4 cup honey
1 cup finely chopped, pared, tart apples
                   
1. Preheat oven to 375 degrees F. Lightly grease one 12-cup
   muffin tin. 
2. Lightly beat egg whites. 
3. In a separate bowl mix dry ingredients thoroughly. 
4. In a separate bowl, mix remaining ingredients, including
   egg white. Add to the dry ingredients. Stir until barely
   moistened. Batter will be lumpy. 
5. Fill greased muffin tins two-thirds full. Bake about 20
   mins until lightly browned.
