Buttermilk Oatmeal Bread
Makes 1 loaf
1 cup rolled oats
1 cup buttermilk
1/2 cup vegetable oil
1 egg
1/2 cup packed brown sugar
1 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup chopped nuts
1. Mix oats with buttermilk. Let stand for 1/2 hour.
2. Stir oil, egg, and brown sugar into oat mixture. Stir
together flour, baking powder, soda, and salt: mix into
oat mixture. Fold in nuts. Pour batter into a greased and floured 8
1/2x41/2" loaf pan.
3. Bake at 350 degrees F for 55-60 mins, or until done.
